This chapter discusses the rise of the Parisian cafe and the chemical laboratory during the 18th century. These cafes were places where the reliability and credibility of scientific knowledge were being challenged. The chapter explains how institutional affiliation divided city merchants, especially those few who entered the academies of Bourbon absolutism. It looks at compound liqueuers and the innovation and invention of liqueuers. It also talks about the delights of distillation.
